At Lar de Paula, quality is guaranteed from the source. We work exclusively with grapes from vines over 40 years old, grown in selected plots in Elvillar, Laguardia, Cripán, and Lanciego. The harvest is done manually in small boxes to keep the fruit in perfect condition. This initial selection ensures wines with character, authenticity, and a high level of quality.
Winemaking Process of Our Wines


In the winery, each grape passes through a double selection table to ensure that only the best continue the process. Destemming is carried out carefully, avoiding damage to the grain and preserving all its quality and natural expression.

Fermentation is carried out in stainless steel tanks with controlled temperature to preserve the fresh aromas of the grape and obtain elegant tannins. Each variety, plot, and vintage is worked separately to guarantee wines with their own identity and maximum quality.

The wines selected for aging rest in oak barrels, mainly French. During this process, which can exceed 24 months, the wood provides structure, complexity, and balance, always respecting the character of the wine without concealing it.

Before reaching the market, the wine rests in the bottle for months or even years. This final refinement rounds out the nuances and ensures that each wine expresses itself at its best when opened.
